Preserve your time with a quick strawberry bar

Strawberry oatmeal bars are a snap to put together and bake in 30 minutes or less. They feature a light sweetness from coconut, nuttiness from quick oats, and of course, delicious strawberry flavor from preserves.

I am often lost when it comes to buying preserves, jams, jellies, etc.

I know there are differences, but for some reason, my brain can’t seem to keep it all straight. If you ever see me at a store, staring at my phone in front of a shelf of spreads, you’ll know exactly what I’m Googling at that moment.

A farm out of Pennsylvania, Masonic Village Farm, has a blog post on its website, explaining all the ins and outs of the fruity offerings.

Jelly is made with juice. Jam has fruit mashed up in it. Preserves uses big pieces or whole fruit. Spreads are fruit without any added sugar, and butters have pureed fruit.

It’s amazing to me that there’s a term for every subtle difference.

I found myself researching this mystery yet again this past week, as I needed to buy some strawberry preserves for some delicious bars, which did not disappoint at all.

Strawberry Oatmeal Bars

Strawberry oatmeal bars are a snap to put together and bake in 30 minutes or less. They feature a light sweetness from coconut, nuttiness from quick oats, and of course, delicious strawberry flavor from preserves.

Ingredients

  • 3/4 cup butter melted
  • 3 teaspoons vanilla
  • 1 1/4 cups flour
  • 1 1/4 cups quick oats
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup strawberry preserves or flavor of your choice
  • 1/2 cup sweetened shredded coconut

Instructions

  • Preheat the oven to 350 degrees.
  • In a microwave-safe mixing bowl, melt the butter. Dump in the vanilla, flour, oats, sugar, baking powder and salt and mix well until everything is completely combined.
  • Add all but one cup of the mixture to a nine-by-13-inch baking pan (you don’t need to grease it). Press it down evenly over the bottom of the pan.
  • Spoon the preserves over the top, spreading it out evenly.
  • Stir the shredded coconut into the remaining cup of crumbs, and loosely sprinkle the crumb/coconut mixture evenly over top of the preserves layer.
  • Bake for 25 to 30 minutes or until the top is nicely browned. Let the bars cool completely before cutting, and store them in an airtight container.

These were a big hit at the barbecue I took them to, and they were so, so easy to make, too. This would be a great recipe to make for a young or beginning baker. The tinge of coconut was the perfect amount, and the preserves did all the work outside of that.

The nice thing is, you can easily use the preserves of your choice if strawberry isn’t really your thing or if you want to have several options for a bake sale or snack table.

And honestly, if you wanted to use a jam instead, you’d probably be just fine. Although, as we have established, I am definitely no expert.

A crustless pie recipe can really take the cake

This fresh strawberry cake is moist and light and a fabulous dessert to pair with a bowl of vanilla ice cream or a cup of coffee.

Every week, I go have lunch with my Little for Big Brothers Big Sisters. We solve the world’s problems over school food and Uno cards as only a 13-year-old and a 39-year-old can.

Recently, we discussed the nature of sandwiches. Is a hot dog a sandwich? How about a taco? Where do quesadillas come into play?

Her assessment was that tortillas didn’t count; we stalled out on the subject of buns. We’ll have to come back to it at some point and figure it out.

I was reminded of that conversation when I made this week’s recipe, except my internal struggle was: cake or pie? The recipe author calls it a “crustless pie,” but honestly, it’s a phenomenal, moist cake that just happens to be made in a pie pan—at least in my humble opinion.

Whatever the ruling, though, it was really good, and it is perfect for all the sweet berries that are starting to hit our grocery store shelves right now.

Fresh Strawberry Cake

This fresh strawberry cake is moist and light and a fabulous dessert to pair with a bowl of vanilla ice cream or a cup of coffee.

Ingredients

  • 1/2 cup butter melted
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 1 cup plus 2 tablespoons sugar, divided
  • 1 cup flour
  • 1/4 teaspoon salt
  • 16 ounces fresh strawberries halved or quartered, divided

Instructions

  • Preheat the oven to 350 degrees.
  • Prepare a nine-inch glass pie dish by spraying it with cooking spray.
  • In a large mixing bowl, add the melted butter (let it cool a bit), eggs, vanilla extract and almond extract. Beat the mixture to combine.
  • Add in one cup of sugar, the flour and salt, and beat until you have a smooth batter.
  • Fold in all but about 1/4 cup of your strawberries, and pour the mixture into your prepared pie dish, spreading it out evenly.
  • Lightly press the remaining strawberries into the top of the batter, and sprinkle two tablespoons of sugar evenly over the top of the cake.
  • Bake for 35 to 40 minutes or until a toothpick inserted in the center of the cake comes out clean.
  • Cool completely before slicing. Store any leftovers in the fridge in an airtight container.

We really, really enjoyed this one. The vanilla and almond extracts compliment the flavor of the fresh strawberries perfectly and really help the fruit be the star of the dessert. This was delicious for breakfast with a cup of coffee, too.

You could easily swap in blueberries, raspberries, etc., if you’re not a strawberry fan or your local grocery store has something else on the shelves.

If you make this, you’ll have to tell me if I’m wrong in the cake vs. pie debate. I haven’t asked my Little to weigh in yet. If she’s anywhere near the expert on baked goods that she is on sandwiches, though, I’ll have a definitive answer in no time.

‘Galette’ yourself enjoy some tasty, fruit-filled pastry

Strawberry rhubarb galettes are a great summer dessert. The combination of tart rhubarb, sweet strawberries, bright lemon and warm cinnamon creates the perfect sweet to share with guests.

I had a great dinner night with my family over the weekend.

After going out for some greasy food, topped off with ice cream and helping my niece extract every last quarter from my purse so she could eventually win a tiny stuffed turtle from a claw machine, I headed back to my parents’ house, where I spied their ever overflowing garden of rhubarb.

This led, of course, to me climbing over the short fence with a paring knife, ready to extract a dozen nearly two-foot-long stalks to take home to my kitchen. It didn’t even look like I made a dent when I was done, and Mom implored me to come back for more later if I decided I needed some.

In the past, I made my grandma’s rhubarb cake with my garden haul. (It’s on my website if you haven’t tried it. It’s delicious.) This time, I figured I should try something new with at least some of my harvest and stumbled on a great recipe for galettes—basically roughly shaped pies.

Strawberry Rhubarb Galettes

Strawberry rhubarb galettes are a great summer dessert. The combination of tart rhubarb, sweet strawberries, bright lemon and warm cinnamon creates the perfect sweet to share with guests.

Ingredients

Crust Ingredients

  • 1 1/3 cups flour
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/2 cup very cold butter cubed
  • 1 tablespoon apple cider vinegar
  • 1/3 cup very cold water

Filling Ingredients

  • 2 cups fresh strawberries quartered
  • 2 cups fresh rhubarb cut into half-inch pieces
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • zest from one lemon
  • 3 tablespoons cornstarch
  • 1 teaspoon cinnamon

Other ingredients

  • 1 egg beaten
  • 1 tablespoon water
  • additional flour as needed

Instructions

  • For the dough, combine the flour, sugar, salt and butter in a food processor. Pulse a few times to start combining the ingredients and then pour in the water and vinegar. Turn the processor on high and process until the dough pulls away from the sides into a ball. (If it stays wet and sticky, keep adding flour, a little at a time, until the dough comes together.)
  • Split the dough into four even pieces, form them into small discs, and wrap each with plastic wrap. Place in the refrigerator over night or for at least an hour until the dough is completely cold.
  • When you’re ready to make the galettes, preheat the oven to 425 degrees. Prepare a baking sheet by greasing it or lining it with parchment paper.
  • Combine the filling ingredients in a large bowl. Stir until the dry ingredients are well distributed through all the fruit.
  • On a well-floured surface, roll out the first dough disc into a rough circle shape to about 1/8-inch thickness. (Keep picking it up and adding more flour underneath as you roll. It will make picking up the filled galette way easier.)
  • Once it’s rolled out, spoon one-fourth of the fruit mixture into the middle of the circle. Roughly fold the sides in about about an inch all the way around.
  • Carefully transfer the galette to the baking sheet. Repeat with the other pieces of dough.
  • In a small bowl, beat the egg with one tablespoon of water, and brush all of the pastry on the galettes.
  • Bake for 30 minutes or until the crust is golden brown.
  • Let cool before slicing and serving. Store leftovers in an airtight container.

I waited until the galettes were just cool enough to extract from my baking sheet, and we ate them warm. They would have been fabulous with vanilla ice cream.

There was just enough sweetness from the rest of the ingredients in the filling to cut the tartness of the rhubarb, but its flavor still shone through. It was a great dessert.

I still have a glut of rhubarb in my fridge and a lack of quarters in my purse, but it made for the perfect weekend.

Gelatin pie will make you say ‘Jell-O, there’

Strawberry gelatin pie is a cool treat for a hot day, with very simple ingredients and preparation.

With heat advisories peppering the weather reports this past week, I found myself in serious need of a cool, summer dessert that wouldn’t heat my kitchen past its breaking point.

I guess I didn’t really “need” it, but when the heat index is pushing into the triple digits, I often search for something sweet to try to cool things down a bit. Of course, I’m nearly always in search of something sweet.

This time, I opted for a non-ice-cream treat, which is rare for me, and I instead reached for a box of strawberry gelatin sitting in my pantry.

I was in the mood for a slice of pie, and since I’d recently found a recipe for a gelatin pie I wanted to try, I decided it was high time to whip one up.

The recipe I found was on the blog “Spaceships and Laser Beams.” You can find the original post at https://spaceshipsandlaserbeams.com/no-bake-strawberry-jello-pie/. I changed absolutely nothing, except I realized quickly that there is way too much filling produced by this recipe for just one pie, so I added an additional crust. If you’d rather make just one, you’ll just have leftover filling that you can let setup in the fridge and eat in non-pie form.

Strawberry Gelatin Pie

Strawberry gelatin pie is a cool treat for a hot day, with very simple ingredients and preparation.
Course Dessert

Ingredients

  • 2/3 cup boiling water
  • 3- ounce package strawberry gelatin
  • 1 cup ice cold water
  • 16 ounces frozen whipped topping defrosted
  • 2 prepared 9-inch graham cracker crusts

Instructions

  • Add the gelatin to the 2/3 cup of boiling water and stir until it is completely dissolved.
  • In a large bowl, combine the gelatin and cold water and stir it until it begins to thicken just a little. Add in the whipped topping and stir well.
  • Refrigerate the filling for 30 minutes to let it begin to set up.
  • Stir the filling and spoon evenly into the two crusts.
  • Refrigerate the pies for at least three hours or overnight before slicing.
  • Store covered in the refrigerator.

This is one of those recipes that would be perfect for a beginning cook, especially if you do like I did and boil the water in the microwave instead of on the stovetop.

I also lazily created my ice water by putting a cube in my one-cup measuring cup, filling it with cold water, and waiting. As you can imagine, it didn’t take long to dissolve into nice, super cold water.

If you’ve never tried a gelatin pie before, it’s incredibly airy, making it the perfect, light after-dinner treat, and since it’s such a pretty shade of pink, it’s a nice addition to the table. You could easily decorate it with some more whipped cream if you wanted to.

And, while I won’t claim this as a health food, I did use the low-fat whipped topping and a reduced-fat graham cracker crust, so despite the fact that it’s most certainly still a dessert, it didn’t pack the calorie wallop that most pies tend to have.

Plus, it did cool me down, for at least a couple minutes, which was nice, but full disclosure, if Mother Nature persists with this balmy weather, it will probably take more than one slice to do the job.
